It’s September, and it’s still hot here in Texas. My kids practically demand a smoothie or Banana Whip every day after school! Not that they’re allowed to demand particular foods. But well, they REALLY want something cold after school. 🙂
This Watermelon Strawberry Slushy was the perfect cold, after-school thirst quencher! In fact, my daughter said, “Mom, you HAVE to put this recipe on the blog!”
As is so often the case with recipes, necessity was the mother of invention. The organic watermelon I had excitedly picked up from our local Tom Thumb grocery store turned out to be slightly overripe- not spoiled or anything- just slightly mushy.
Blending it into a slushy along with some fresh strawberries and ice was the perfect way to enjoy our slightly mushy watermelon!
2 cups watermelon chunks
1 cup fresh strawberries-cut in half
2 cups ice
3 T. maple syrup (or sweetener of your choice)
1 T. fresh lime juice
Blend all ingredients except ice. Add ice and blend well.
