This pizza was so tasty, I will definitely be making it again. It’s a great way to load the kids up on veggies! If you don’t have raw cashews on hand for the vegan ricotta, you can use olive oil instead.
2 large pizza crusts or 4 flour tortillas (I recommend using a thin pizza crust. I love using flour tortillas because it’s so easy and makes a nice thin, crispy crust)
1/2 cup vegan ricotta cheese (see recipe below OR use 4 T. olive oil)
4 large cloves garlic, minced
8 large basil leaves, minced
1 large tomato, sliced and cut into quarters
1 bunch baby chard, stems removed and finely chopped
3 leeks, scallions, or onion, thinly sliced
1 cup kalamata olives, chopped
olive oil for drizzle (@ 4 T.)
coarsely ground salt
2 t. aged balsamic vinegar reduction (optional, but highly recommended, since it adds a great dimension to the flavors of the pizza! )
Preheat oven to 375 degrees.
Place 1/2 cup balsamic vinegar in heavy saucepan and simmer on low heat for 20-30 minutes. Mixture will reduce and be slightly thickened-will also thicken more as it cools.
While vinegar is simmering;
Place crust(s) on well-oiled pizza pans.
Spread vegan ricotta cheese (or olive oil) onto crusts.
Sprinkle minced garlic onto cheese.
Add chopped baby chard, sliced tomatoes, sliced leeks, and chopped kalamata olives in that order.
Drizzle olive oil over toppings and crust.
Bake at 375 degrees for 20 minutes or until crust is browned.
Remove from oven.
Sprinkle with minced basil.
Drizzle with olive oil.
Drizzle with balsamic vinegar reduction
Sprinkle with coarse salt and black pepper.
Serve with a side salad and a glass of wine for the grown-ups!
Easy Vegan Ricotta Cheese Recipe (tastes remarkably like dairy ricotta!)
Soak 1/2 cup raw cashews in water for several hours or overnight.
Drain and rinse cashews.
Place in blender with 1/4 c. water, 2 T. vinegar (apple cider or white) and 1/2 t. salt.
Blend on high until smooth and creamy.
