Remember those Amazing Vegan Chocolate Cupcakes? Well, here’s the recipe for the frosting I used for those bad boys. This recipe is based on Joy of Cooking‘s Buttercream Frosting recipe. Instead of butter, I used Earth Balance Dairy-Free, Soy-Free Buttery Spread, and I increased the vanilla. I promise, this vegan buttercream frosting will not disappoint!
This is a creamy, buttery frosting. If you’re looking for a stiff, less buttery/more fluffy frosting, you can add more powdered sugar and rice milk. It freezes really well too!
1/4 cup Earth Balance buttery spread
2 cups organic powdered sugar
1 T. vanilla extract
1 T. rice milk
pinch of salt
Combine all ingredients in a bowl, and mix with an electric mixer until smooth and fluffy (2-3 minutes).
