Celebrate the beginning of Fall with these Savory Butternut Squash Fritters! This is just one of many great seasonal recipes on Greenling’s blog, so head on over there and check ’em out!
2 cups grated butternut squash (If you’re not sure how
grate your squash is to grate your squash, scroll down for a quick tutorial.)
1/2 a medium onion, grated
1/2 cup grated carrots (about 2 carrots)
1/2 t. minced garlic or 1 t. garlic powder
1/2 cup chick pea flour
1/4 cup bread crumbs (or more chickpea flour for gluten-free option)
1 t. salt
2 t. paprika
1/8 t. black pepper
juice from 1 lime
2 T. water
1/4 cup olive oil for frying (I use a very large cast iron skillet. If you’re using a non-stick pan, you only need @ 2 T. oil)
Note; for a gluten-free option, you can substitute additional chick pea flour for the bread crumbs.
1. Combine all ingredients and form into eight 3 in.
thick diameter patties.
2. Heat olive oil in pan.
3. When oil is very hot, place patties in pan and fry for 4 minutes on each side.
Serve immediately while hot and crispy! 🙂
