My kids’ absolute favorite cooked vegetable is Roasted Sweet Potatoes. They are so easy to make, super nutritious (especially when they’re organic), and make a great side dish for really ANY main dish!
These Sassy Roasted Sweet Potatoes add some variety to the roasted potatoes trend we seem to have in the winter. 🙂 Grownups love them; kids- meh.
5 med-lg. organic sweet potatoes at room temperature
1 T. olive oil
2 t. salt
1 t. organic cinnamon
1/4 t. ground cloves
1/4 t. cayenne pepper (or paprika for an equally delicious but less spicy flavor)
Scrub potatoes and cut into 1 in. cubes
Place in baking pans and toss with olive oil. Lightly salt the potatoes.
Combine the 2 t. salt, cinnamon, cloves, and cayenne pepper in a small dish. Set aside.
Bake potatoes at 400 degrees for 45 minutes or until browned.
Sprinkle with the spice mixture, toss, and serve!
