Roasted sweet potatoes is my number 2 ‘go-to’ dish in the Fall and Winter. Crispy and salty on the outside; soft and sweet on the inside-mmm!
So easy; so delicious!
I have found that they turn out much better if you put them in the oven when they’re at room temperature. I keep my potatoes in the pantry, so they are usually at room temperature already. But if you keep your potatoes in the fridge, you might want to take them out in the morning so that they’re at room temperature by the time you roast them.
Ingredients for Roasted Sweet Potatoes
2 large organic sweet potatoes
1 T. olive oil
1 t. salt
Peel the potatoes and cut into 1/2″-1″ cubes.
Place in a 9×12 in. baking pan or cookie sheet.
Add olive oil and salt and toss with your hands.
Roast in 400 degrees oven for 50 min.-1 hr. or until browned.
Don’t be surprised if the sweet potatoes are sort of ‘stuck’ in the pan. Just flip the spatula over and loosen them from the pan with the back of the spatula before scooping out of the pan. And don’t worry if any of the pieces get smooshed- does not affect the flavor at all I promise! 🙂
