As I mentioned in my ‘Grapefruit Juice’ post, I’m trying to find creative ways to use my 50 lb. order of organic grapefruits. We’ve eaten most of them fresh for breakfasts, but I still have quite a few left. So I decided to try my hand at roasted grapefruit. . . with a twist!
The flavor combination of warm grapefruit, rich cacao butter, and fresh mint is really lovely-unusual, but lovely. Where do you buy cacao butter? I order raw, organic cacao butter online from Sunburst Superfoods.
To serve six, you will need. . .
3 organic ruby red grapefruits
2 T. organic raw cacao butter
1/3 c. organic raw sugar
2 t. chopped fresh organic mint leaves
These are so easy to make. . .
Wash and slice the grapefruits in half. Slice around each grapefruit section so that it is loosened from the fiber but still in its peeling. Place each half in a shallow baking dish.
Melt cacao butter on very low heat or in the microwave.
Add sugar and mix in. (Mixture doesn’t ‘blend’ very well but that’s OK).
Drop 1 Tablespoon or so of the mixture onto the center of each grapefruit.
Broil for 5-10 minutes. (Until tops or edges are slightly browned)
Garnish with chopped mint. Serve immediately.
