I’ve had some purple hull peas in the freezer, and decided it was time to cook a bag of them. These easy Taco Seasoned Purple Hull Peas seemed like a good idea. And with all the beautiful and delicious salad greens I’ve been receiving in my Local Box this winter, it seemed only logical to put ’em together for this yummy Purple Hull Peas Taco Salad!
I mean, who doesn’t like taco salad!?
And as I’ve already mentioned in this Dairy Free Taco Salad Bar post, taco salad is DELICIOUS without dairy products. They key is to use lot of fresh, flavorful ingredients so that you don’t miss the cheese!
1 large bunch lettuce, washed and torn into bite-sized pieces
1/2 bunch fresh cilantro, minced
1 bunch green onions, sliced
1 avocado, cut
1/8 teaspoon salt
1/2 recipe Taco Seasoned Purple Hull Peas
Combine the lettuce, cilantro, and green onions in a large bowl.
In a small bowl, toss the sliced avocado in the fresh lime juice and a pinch of salt.
Serve with tortilla chips, Taco Seasoned Purple Hull Peas, and your favorite dressing.
