Lunches around here always include some type of fresh organic fruit.
Since we avoid processed foods, we rarely eat things like chips, Jell-O pudding cups, fruit snacks, or fruit cups. So if we run out of fresh fruit, lunches tend to be sort of well, boring.
But sometimes, we run out of fresh fruit. And that’s when I can choose to either cave and put a bag of chips on the table OR get creative.
This time I chose to get creative and came up with this yummy Organic Strawberry Banana Whip.
Obviously, this recipe would NOT work for school lunches, but it was great for our Saturday lunch!
So this is how it happened. . .
It was 11:00 a.m. on a Saturday. . .
“Mommy, what are having for lunch?”, asked one of my daughters.
“Sunbutter quesadillas!” I replied proudly, pleased that I had a quick and tasty lunch idea ready on a SATURDAY!
“Are we having anything else?” (empty, depressed sound in daughter’s voice)
“Hm. . . let me see what else we have in the fridge. . . ” I replied with attempted heroism.
Potatoes, onions, limes (could make limemade. . . )condiments, milk, ooh tonic water? No.
Freezer check. . .THREE frozen organic strawberries left in a bag I’d picked up from Aldi several weeks ago. . .
A bunch of frozen banana slices. . .ooh Banana Whip!
Hm, throw in those three organic strawberries to make. . . . . . . . . . .
Organic Strawberry Banana Whip? Yes!
“I could make you some Strawberry Banana Whip! ” I said triumphantly.
A chorus of “Yeah!!” s from all three daughters sealed the deal.
- 2 large organic bananas , sliced and frozen
- 2 cups frozen organic strawberries
- 1 T. vanilla
- 3 T. honey
Whip it! (in the blender or preferably food processer)
