Tapioca pudding is one of those vintage foods that really has no business being vintage. It is so delicious, easy to make, and can be quite healthy!
I use organic sugar and homemade organic almond milk when I make it.
Organic sugar tastes and SMELLS so different from regular sugar. I wish you could stick your nose into my bucket of organic sugar. It smells amazing. It smells sweet, fruity, and kind of caramel-y. It’s hard to describe really.
Have you ever smelled conventional, non-organic sugar? I personally think that is stinks. I used to think this was normal for sugar, but it’s not.
Organic sugar is too expensive, you say? Actually, organic sugar purchased in bulk from Azure Standard costs $1.34 per lb. Yes, it’s more expensive than conventional but not much more!
And why is organic sugar brown? It’s brown because it’s not bleached. Did you know that conventional sugar is bleached? Yummy! Mabye that’s why it stinks.
So anyway, I think organic sugar adds a lot to this delicious Organic Eggless Creamy Almond Milk Tapioca Pudding.
The other key ingredient which imparts a lot of flavor is the homemade organic almond milk. I have tried every brand of store-bought almond milk and NONE have the flavor of the homemade stuff. The key is to use imported, Italian raw organic almonds. These almonds taste like none you can buy here in the US because they are not irradiated. You can order them online from Azure Standard for a great price- the best I’ve found anywhere!
Organic tapioca pearls were key to this recipe only because this recipe came from the back of the package! I used almond milk instead of regular milk, left out the vanilla extract, strawberries, and added salt. Thanks, Azure Standard, for the awesome eggless tapioca pudding recipe!!
- 2 cups water
- 1 cup organic tapioca pearls
- 2 cups organic almond milk
- ¼ cup organic sugar
- pinch of RealSalt
- Soak tapioca pearls in water for 1 hr. Drain.
- Combine soaked tapioca pearls, sugar, almond milk, and salt in a heavy saucepan.
- Cook and stir over medium heat until thickened and tapioca pearls are transluscent.
- Serve warm or chilled.
