I’m not gonna lie, cocao butter isn’t cheap. But a little bit goes a long way. I paid 9$ for a 1 lb. bag and I’ve only used half the bag in 3 months. I rarely bake treats, but when I do, I love this stuff! Since I can’t use real butter or coconut products due to my daughter’s food allergies, I find cacao butter to be a yummy substitute in baking or other recipes that call for butter. And cacao nibs add a nice crunch to the cookies!
2 cups rolled oats
1 cup flour
1/2 cup flax meal
1/2 cup raw, organic sugar
1 t. salt
2 t. baking soda
1 t. cinnamon
1/4 cup cacao nibs
1/4 cup melted cacao butter
1/4 cup olive oil
3 T. apple cider vinegar
1 t. vanilla extract
Preheat oven to 375 degrees.
Combine dry ingredients in a large bowl.
Combine liquid ingredients.
Add liquid ingredients to dry ingredients and mix well.
Drop by spoonfuls onto greased cookie sheets.
Bake for @ 15 minutes or until lightly browned on edges.
