Here’s a savory take on mangoes! The flavors of freshly squeezed lime juice, hot sauce, and pumpkin seeds go so well with a sweet, juicy mango. You absolutely HAVE to try it! I definitely cannot take credit for inventing this recipe. A friend told me about it, and apparently it is a common dish in South America. My mission is to make it a common dish here in the US too! 🙂 Traditionally, the pumpkin seeds are ground (called, pepita). But because I’m a busy mama who’s always looking for shortcuts, I decided to throw ’em on whole and it works just as well. If you really want to be authentic however, you could grind them up in your coffee grinder.

2-3 T. roasted pumpkin seeds
1/2 a lime
coarsely ground salt
Cut your mango into cubes and place in a dish.
Sprinkle with roasted pumpkin seeds.
Squeeze the juice from half a lime over it.
Sprinkle with salt.
Sprinkle with hot sauce. (optional-but highly recommended!)
Grab a spoon and nom-nom! (Told you it was easy!)
