After several attempts, I’ve FINALLY figured out the secret to creamy, delicious chicken enchiladas without using cheese, dairy milk or sour cream!
The secret is so simple, you’re not going to believe it. I combined my Creamy Cashew Alfredo Sauce with salsa! That’s it! So easy, right?
Something about combining the flavors of salsa and cashew alfredo sauce just– WORKS!
It tastes creamy and southwestern-y, and YUMMY! I use Kirkland brand organic salsa from Costco, but probably any good salsa would work.
For the chicken filling, I warmed some leftover roasted chicken in the slow cooker along with some spices and chicken stock. I seasoned it the same way I season the chicken for Leftover Roast Chicken Taco Salad Bar.
The organic flour tortillas I use are Stacy’s brand. This is the ONLY brand of organic flour tortillas that doesn’t contain soy or preservatives! I was stoked to recently discovered these tortillas online!

Leftover roast chicken seasoned and warmed in the slow cooker, cashew alfredo sauce combined with salsa, and organic flour tortillas-pretty come together quickly and easily for these dairy-free enchiladas.
BONUS: this creamy cashew sauce is much faster to make then traditional enchilada sauce made with a roux!
After the ingredients are all assembled, just roll up those tortillas, place them in a baking pan, cover with the creamy cashew southwestern alfredo sauce, cover with foil, and bake for 30 minutes until warm!
My girls thought they wouldn’t like these, but when they tasted them they fell in love. They all had seconds!
