It’s Saturday. One of those great and rare Saturdays when there’s nothing on the calendar! I love it when we can just relax and not worry about being somewhere on time.
The only problem with these Saturdays is that they always trick me. They trick me into thinking that I’ll have a day to relax. But when Mommy is home, the kids will ask for stuff.
EVERY 2 MINUTES, one of my daughters is asking me for something or telling me about something. . . oh it’s all very interesting of course. . . It’s things like,
how pretty their new fairy-princess toy looks in her jewel dress. . . or
how tall they can build their Jenga tower. . . or
how well they’ve cleaned the playroo-oh wait, I shouldn’t complain about that one. . .
So anyway, it was ‘snack time’, (aka ‘mommy it’s time for you to do something for me again’). They asked for ice cream.
So of course I said ‘yes’.
To their credit, it IS the end of July, and it IS Texas. So a cold snack is in order. But I offered them a healthier alternative- an instant mango sorbet, made with sweet, organic mango chunks, lime juice, and healthy maple syrup.
They loved the Instant Organic Dairy-Free Mango Sorbet that I whipped up, so I decided it was a blog-worthy recipe. I actually made 2 versions of this recipe; one for the kids, and a second batch with a splash of dark rum for the grown-ups. 😉
It’s delicious either way, but I HIGHLY recommend adding the rum.
- 3 cups organic frozen mango chunks
- 3 Tablepoons maple syrup or organic sugar
- 1/4 c. water (if using a blender- not needed if using a food processor)
- juice from 1 organic lime
- Grown-up version; add one Tablespoon of dark rum-yum!!
- Combine all ingredients in a blender, blend on high until smooth, and serve.
