O.K., so it’s not exaaaactly lemonade season. But winter temperatures have been mild in our part of Texas this week, and my daughters absolutely love lemonade. Also, lemon and honey are both great for supporting the immune system during flu season!
So for a special after-school treat yesterday, I made some homemade organic honey lemonade and warmed up some of Rudi’s organic soft pretzels for my girls. Yum!
I have found that using organic or locally grown lemons makes a huge difference in the amount of juice you’re able to squeeze out of the lemon. So even though they cost more, it is totally worth it because you will need half as many!
4 organic lemons
1/3 cup honey
2 c. water
1. Roll the lemons.
2. Cut each lemon in half and squeeze out the juice (you’re lucky if you have a juicer, although it’s very easy to do it without as well)
3. Add honey to the lemon juice and stir very well until the honey is dissolved.
4. Add water and pour over ice. Makes 4 servings.
