You don’t need flax seeds, applesauce, banana, or Ener-G for these Egg-Free Organic White Spelt Sugar Cookies!
You simply cream the Earth Balance, organic sugar, and vanilla. Add white spelt flour, baking soda, and salt. . .
and there’s one more ingredient. . . a ‘secret’ ingredient. . .
I’ve made this recipe twice, and the cookies come out delicious and flaky every time. The secret ingredient in these delicious, egg-free, and EASY cookies is vinegar! Who knew that these hassle-free, egg-free sugar cookies could be so delicious?
There’s another secret to this recipe, that I’m afraid to tell you about because you might judge me.
I used lard.
Yes, I used pastured lard (which I obtain from a local farm) to make these cookies. I used 1/2 cup lard and 1/2 cup Earth Balance, and it made the most lovely, flaky, flavorful sugar cookies! The first time I made these, I used 100% Earth Balance, but I’m trying to avoid using it since it’s made with processed palm oil.
The lard that I use is very good quality, purchased from a local farm. The farmer’s wife makes it herself, so I know it’s fresh! I haven’t had much experience cooking with lard, but it seems that if lard is not super fresh or of stellar quality, it has too much of a ‘bacony’ flavor.
The lard that I use does have a mild bacony flavor, but it is not off-putting. I actually prefer it to the cardboard flavorlessness of store-bought cookies.
I baked these cookies two different ways; one ‘perfect’ and one ‘imperfect’. To make the ‘perfect’ looking cookies, I cut around the edges with the rim of a cup. It’s one more step, but it is super-easy and worth it if we’re going for looks. No need to break out the rolling pin and flour.
For everyday cookies, simply flattening them with the bottom of a sugared cup works great.
My next recipe experiment will be to try using lard exclusively, and leaving out the Earth Balance altogether. I would love to be able to bake delicious dairy-free, egg-free cookies without using any palm oil. If my experiment is successful, I will post about it! 🙂
- ½ cup Earth Balance plus ½ cup pastured lard OR 1 cup Earth Balance
- 1 cup organic sugar
- 3 Tablespoons vanilla extract (yes, three-- I use home-brewed vanilla purchased from a friend)
- 3 cups organic white spelt flour
- 1 and ½ teaspoons baking soda
- ¾ teaspoon salt
- 1 Tablespoon vinegar
- Combine Earth Balance, sugar, and vanilla and beat until fluffy.
- Add flour, baking soda, salt, and mix well.
- Add vinegar and mix well.
- Can bake as drop cookies immediately or refrigerate for three hours to make shaped cookies.
- Bake on ungreased cookie sheet at 375 for 10 minutes.
