This Easy Tasty Turmeric Baked Rice has become one of my go-to weeknight side dish recipes.
I used to ALWAYS cook my rice in the rice cooker. Rice cookers are a marvelous invention, but my trusty rice cooker died last year. 🙁
I HATE cooking rice on the stove. You have to babysit the pot, and then it seems like the rice never turns out fully cooked. There’s nothing more annoying than eating rice that is just a tiny bit crunchy! Well, mabye paper cuts are right up there with crunchy rice. . .
Anyway, the point is, I will do almost anything to avoid cooking rice on the stove. So I decided to try ‘cooking’ it in the oven. “As long as it’s covered with foil”, I thought, “it should cook just fine. . .”
To my great joy,the rice turned out beautifully! No mess, no stirring, no rice cooker needed to make perfectly cooked, delicious rice!
The flavor of this Easy Tasty Turmeric Baked Rice reminds me of Rice-a-Roni. It’s very delicious, and as you probably know, turmeric is so nutritious!
I think the flavors of this side dish go especially well with chicken. In fact, you could even add some leftover chicken and some frozen organic peas to this dish and make it an easy one-dish meal!
- 1 cup Jasmine rice
- 2 cups organic chicken stock
- 2 Tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon dried minced onion
- ¼ teaspoon organic ground turmeric
- ¼ teaspoon organic ground black pepper
- Combine all ingredients in a baking dish, and cover tightly with foil.
- Bake at 400 degrees for 30-40 minutes.
- Optional: Garnish with fresh cilantro.
