I started making my own refried beans a couple years ago. I haven’t bought a can since, simply because homemade tastes SO much better. They’re super easy, and very economical! I usually make a double batch and freeze some in ziplocs.
These make yummy homemade burritos!
1 cup dry pinto beans, soaked in water overnight
2 c. water
4-5 small-med. hot peppers, coarsely chopped
1 bulb of garlic (cloves smashed and skins removed)
or use 4 T. minced garlic or 3 T. garlic powder
1/2 small onion, coarsely chopped
1 and 1/2 t. salt
1 t. cumin
1/4 t. black pepper
Drain and rinse the soaked pinto beans.
Combine all ingredients in slow cooker and cook on low for 24 hours.
After cooking for 24 hours, they should look like this and they’re ready to be mashed!
Mash with a potato masher (or you could transfer it to a blender and blend if you like a smoother texture).
Use for burritos, tacos, tortilla chip dip, nachos, or serve with rice and chopped cilantro for an easy, healthy, and inexpensive dinner!
