I love this recipe because it is SO easy, SO tasty, SO nutritious, SO inexpensive, and ORGANIC!! You literally throw everything into a crock pot and let it cook for several hours (like all day or night) and that’s it!
I modified the recipe on Azure’s split pea package. I add ham and use more carrots, celery, and water. Here’s my recipe;
What did you say? Do the kids eat it? Oh, um no. They won’t touch it. But the hubby and I love it and I just cook up a pot of oatmeal for the kids. As I’ve mentioned in previous posts, they love oatmeal-go figure!
Ingredients (This will make enough for two meals)
2 cups organic split peas
6 cups organic chicken stock
3 cups organic water (just kidding-any water will do)
2 med. organic potatoes, cubed
2 cups chopped organic carrots
1 cup chopped organic celery (@ 3 stalks)
1 med.-lg. organic onion, chopped
3 bay leaves
2 teaspoons salt
1/4 teaspoon black pepper
2 cups cubed ham OR leftover ham bone
Place all ingredients in a large crock pot and cook on med-high for 8-10 hours.
