This is one of my favorite slow cooker recipes. It’s a SUPER easy way to make VERY tasty chicken that can be used in SO many recipes!
I use boneless, skinless, organic chicken breasts, so that I can just throw them in the slow cooker without spending any time cutting or cleaning chicken.
I used to make this chicken the long way; cut up a whole chicken, cook it, add seasonings, and shred it. Do you have any idea how long it takes to take the meat off a cooked whole chicken? A LONG time! Granted, the flavor of the added dark meat is wonderful, but I just don’t have time for that anymore.
Organic chicken breasts will do just fine!
However, chicken breasts can taste a little bland, so I put in LOTS of spices! Slow-cooking the organic chicken breasts with the peppers, onions, and spices gives it a great flavor even without any dark meat.
MAKE SURE you include these jalapeno peppers! They make a world of difference in the flavor of the chicken!
Also, don’t touch your eyes right after you cut them. They will burn. And not a good burn.
After the chicken has cooked, you shred it, strain the remaining broth, and add it to the shredded chicken along with some fresh, organic lime juice!
Another reason I love using organic chicken breasts in this recipe, is shredding cooked chicken breast is so easy; it only takes 5 minutes tops!
This recipe makes enough chicken for at least two meals. I freeze the leftovers in sandwhich bags, and use them for soup, enchiladas, chicken tacos, chicken taco salad, burritos, tostadas, taco pizza. . . .
It can be used instead of taco seasoned ground beef in just about any recipe!
(Shortuct; Use Easy Organic Chicken Taco Seasoning instead of garlic, onion, cumin, salt, and pepper!)
- 2 boneless, skinless, organic chicken breasts
- 10 cloves garlic, peeled
- 1 onion, cut into chunks
- 4 green chili peppers, seeded
- 2 t. ground cumin
- 2 t. salt
- 1/2 t. black pepper
- 1/2 t. dried oregano
- juice of 1 organic lime
- 1/2 c. organic chicken stock or water
- Place all ingredients in slow cooker, and cook on low for 6-8 hrs.
- Remove chicken breasts from slow cooker and shred.
- Strain broth in slow cooker through a sieve to remove chunks of onion, peppers, etc.
- Pour broth and lime juice over shredded chicken.
