These granola bars are dairy free, nut free, and almost gluten free (just replace the chow mein noodles with something else crunchy). They’re also very easy to throw together-just what a busy mama needs!
(recipe based on Pioneer Woman’s Homemade Granola Bars recipe)
Combine in a large mixing bowl;
6 cups rolled oats
1 cup flax seed
1 and 1/2 cups chow mein noodles (just cuz I had them sitting around- you can use anything crunchy)
1 cup dried cranberries (or other dried fruit)
Combine and heat on the stove just until barely bubbly;
4 Tablespoons melted cacao butter (or Earth Balance dairy/soy free buttery spread- I like cacao butter because it has fantastic nutritional value, and gives a nice, delicate chocolate flavor to the bars)
1/4 cup olive oil
1 teaspoon salt
1 cup brown sugar
1/2 cup honey
1/4 cup molasses
1/4 cup apple juice
1 Tablespoon vanilla
Pour this mixture over the oats mixture and mix well.
Line a large cookie sheet with wax paper. Grease the wax paper with olive oil or cacao butter.
Pour granola mixture into pan and press down with back of buttered spoon (or use hands).
Bake at 350 degrees for 20-25 minutes or until edges look browned.
Slice while warm.
