I know it’s time to make this. . . .
. . . dairy free taco salad bar!
Did you know that taco salad doesn’t need dairy (cheese and sour cream) to be delicious? Just thought I’d ask, since I didn’t know until I tried it just last week. My kids have always eaten it without dairy, but I had always sneaked some grated cheese and sour cream onto mine.
But with all the flavors of lots of veggies and toppings, just a simple Italian dressing does the job and makes a delicious taco salad that’s dairy-free!
1/2 head iceburg lettuce, broken into small pieces
1/4 bunch cilantro, chopped
1 tomato, chopped
1 can black olives, sliced
1/2 onion, chopped
1 c. organic frozen corn, warmed
1 avacado, chopped
2 jalapeno peppers, chopped (pith and seeds removed)
juice from 1/2 lime
1 c. taco meat
2 c. leftover tortilla chip pieces
salad dressing of choice
1. Combine chopped avacado, jalapeno peppers, and lime juice and toss together.
2. Place everything else in a separate bowl and serve!
