These Dairy Free Slow Cooker Mashed Potatoes With Mangolista Lard knocked my socks off yesterday!
I made my usual Dairy Free Slow Cooker Mashed Potatoes for dinner, but decided to try adding a bit of mangolista lard to see how it would taste.
Lard in mashed potatoes? Sounds well, fatty.
And bacony. I was afraid that it might taste gross, so I gingerly mixed in just a smidge of mangolista lard with a bite of mashed potatoes.
OK, first of all, IT MELTS LIKE BUTTER!!
Second of all, IT TASTES LIKE BUTTER!!
Well, not exactly like butter, but PRETTY DARN CLOSE!
The bite of mashed potatoes with mangolista lard that I tasted had a rich, creamy, flavor that far exceeded my expectations for dairy free mashed potatoes (even with Earth Balance) Just to make sure I wasn’t imagining things, I took a second bite. Oh yum. And then I took a bite of the lard-less mashed potatoes. Oh, meh. . .
So it’s official, mangolista lard can be used as a butter replacement in mashed potatoes! No, let me re-phrase that . . .
MANGOLISTA LARD TASTES AMAZING IN MASHED POTATOES! It doesn’t taste like bacon or lard at all. It just adds a richness and complexity to the flavor of the mashed potatoes. Pretty amazing, really. For a foodie- mama who has kids with dairy allergies, this is a thrilling discovery!! I’m so happy that I can replace the highly- processed, palm oil based Earth Balance dairy-free buttery spread I typically use with a nutrient rich, delicious animal fat sourced from a local farm!
Oh, and the mangolista lard I bought through our local co-op is HALF the cost of Earth Balance.
Oh, and mangolista lard has HALF the saturated fat of palm oil.
As my 9 yr. old daughter would say. . .
- 5 medium organic potatoes, peeled and cubed (@ 4 cups )
- 1 and ⅓ cups organic chicken stock
- 1 teaspoon salt
- ¼ cup mangolista lard
- ¼ teaspoon black pepper
- Combine all ingredients in slow cooker.
- Cook on 'high' for 1 and ½ hours (don't try to cook on 'low' for longer- doesn't come out right)
- Mash and serve.
- * Can also cook on stovetop for 30 minutes, mash, and transfer to slow cooker to keep warm.
