Costco had a great price on organic chia seeds last week, so I grabbed a bag. I’ve heard so much about the health benefits of these little guys, that I’m looking forward to using them in lots of recipes!
This recipe was inspired by Martha Stewart’s Vanilla Chia Seed Pudding recipe. I ‘busy-mamafied’ the recipe so that it is basically like an instant pudding recipe! It is unbelievably easy! Ya just mix everything up, pour it into dishes, chill, and eat! The girls and I enjoyed it as a mid-morning snack yesterday, but it would make a marvelous dessert or breakfast too!
1 cup (preferably homemade) almond milk
1/2 cup organic chia seeds (I used dark seeds)
1/4 cup maple syrup
1 t. vanilla extract
1/4 t. ground cinnamon
Place all ingredients in blender and blend until smooth.
Pour into 4-5 dessert dishes.
Cover and refrigerate overnight or for several hours.
Just before serving, top generously with fruit of your choice!
