I love this Super Easy Cashew Whipped Cream! Gone are the days when I had to tell my daughter that she has to fore-go any type of whipped cream on her desserts! Ever since last year when I saw this recipe for cashew cream, I’ve been wanting to give it a try. After modifying it just slightly, I’m thrilled with the results!
This stuff is so cool! And contrary to what some recipes say, it is NOT necessary to pre-soak the cashews! Anytime we can eliminate a step in cooking, I say ‘let’s go for it’! Just make sure the cashews are raw; roasted cashews won’t work.
I use these organic, raw cashews from Azure Standard. I’ve shopped around, and they have the best prices.
Technically, they’re ‘cashew pieces’, but since they’re going to be blended it really doesn’t matter what shape they are now does it!
- 1 and ¼ cup raw cashews
- ½ cup water
- ¼ teaspoon salt
- 2 teaspoons vanilla extract
- 3 Tablespoons sugar
- Combine all ingredients EXCEPT SUGAR in blender and blend until smooth.
- Add sugar and blend for just 5 seconds or so.
Now grab some fresh organic strawberries or a slice of this rich n creamy Easy Organic Cashew Pumpkin Pie! 🙂
