Here is the recipe for delicious Cashew Ice Cream In A Bag as promised in my previous post.By the way, this is a very fun kids’ activity for the summertime! I think I’ll be doing this a few times with my kiddos this summer!
Before you start thinking that I’m a really cool mom for making ice cream with my kids. . . My first grader’s teacher made me do it. Well, sort of. She wanted to have the class make ice cream in a bag, but needed a dairy free recipe so that my daughter could participate. Less than 24 hours after I received her email, I found myself at the school delivering 6 cups of of dairy free ice cream mix to my daughter’s classroom.
But before I did this, I tested the recipe at home with my four year old.
1 cup soaked, raw cashews
1/2 cup water
1/4 cup honey
2 t. vanilla extract
4 ziploc sandwich bags
2 ziploc freezer bags
4 cups ice
Combine cashews, water, honey, and vanilla in blender and blend well.
Pour into 2 ziploc sandwich bags. Seal, and place each bag in another sandwich bag.
Place small bags into freezer bags.
Add 2 cups ice (cubes or crushed) to freezer bag and sprinkle generously with salt.
Seal freezer bag.
The ice should melt and become slushy as you’re shaking the bag. If it doesn’t melt very quickly, add some more salt.
Update 6/19; Just made this again yesterday (with all three girls this time!:) and we needed to add more ice. If the weather is hot or humid and your ice melts before the 10 minutes is up, you will need to add more. If you add more ice, sprinkle it with another tablespoon of salt.
After10 minutes of shaking, the ice cream should be a nice, soft-serve consistency.
I found the easiest way to let the ice cream out of the bag is to squeeze it out rather than try to scoop it out.
If you want your ice cream to be firm instead of soft-serve, transfer to a container, cover, and freeze for 6 hours. My daughter ate hers right away, but I froze mine for a few hours before eating. Oh, and I added rum and raisins to mine. Yep. Yum!
My four year old voted for sprinkles as a topping.
