Busy Day Burritos are one of my go-to meals for well, busy days. They’re also great for days when might need to grab dinner and eat it in the car. Tortillas are one of my pantry staple items. And I try to keep my freezer stocked with organic refried beans. On busy days I can grab a bag, warm it up, and have burritos made in 10 minutes!
Sometimes, I make fancier Dairy Free Mini Burritos with corn and taco meat. But honestly, my kids prefer this simpler version and I’m all about keeping meals simple!
But my daughter (who has the dairy allergy) loves these burritos! Since not all of us in the family are allergic to dairy, I do add grated raw organic cheddar cheese to some of our burritos.
Warm up these bad boys and dinner is done!
I usually end up with a few extras burritos, which is great because they make a handy quick lunch too!
- flour tortillas (I buy them in bulk from Costco-they’re not organic but they are soy-free.)
- organic refried beans (recipe for Easy Slow Cooker ‘Refried’ Beans)
- Spread 2 T. refried beans on a tortilla and roll up like a burrito.
- Wrap each burrito in foil and heat in the oven for 15-minutes at 375 degrees.
