Winter greens are in abundance around here! Also, I’m pret-ty sure I need more magnesium in my diet and greens are loaded with it so that’s awesome.
Seasonal broccoli rabe and easter egg radishes were the inspiration for this simple and flavorful sautee.
Makes a great hot dog topping . . .
or a ‘bed’ for your next fried egg!
Or simply enjoy it as a tasty side.
The point is, you can eat this saute a million different ways!
I LOVED it on my organic hot dog. Mmm-it was sooo good! I know, sophisticated of me.
What can I say. . . I love organic hot dogs. Besides, if a mundane hot dog is topped with broccoli rabe and radish saute, it instantly upgrades to a sophisticated meal. . . right?! 🙂
4-5 large radishes, sliced ( Easter egg radishes)
1 bunch broccoli rabe, stemps removed, chopped
1 bulb garlic, minced (7-9 cloves)
1 T. paprika
1 t. cumin
1/4 c. black pepper
3/4 t. salt
2 T. oil
1. Saute minced garlic in oil just until fragrant.
2. Add paprika, cumin, and pepper.
3. Add radishes and saute for 2 minutes. Add 1 T. water if needed.
4. Add broccoli rabe and saute for 1 more minute. Add salt.
