Apple juice, ya’ll. That’s all you need for the ‘apple’ part of this recipe. Easy, right?! I mean, who wants to take the time to slice apples for a recipe?
Any recipe that requires slicing of fruit gets made by me maybe, once a year? (Yes, I’m referring to apple pie).
NOTE: The apples you see in this picture were sliced for garnishing purposes only! Normally, nobody in this family gets sliced apples with their Apple Cinnamon Vegan Buckwheat Pancakes. Nope, just butter and syrup- that’s it!
We use 100% pure maple syrup. Not because we’re snobby, but because it just tastes so darn good! I buy it from Aldi, and it only costs $4.99 per bottle. Not bad, right?
I buy frozen organic apple juice concentrate from Sprouts or online from Azure Standard. Both are great- and cost about the same. Sprouts is a few cents more than Azure, but the convenience factor sometimes makes it worthwhile.
This recipe has become my go-to pancake recipe. The apple and cinnamon go so well with the flavor of buckwheat flour. I don’t know why. . . Maybe because they’re all brown? No, that’s probably not why. . .
Whatever the reason, these are SUPER delish!
These Apple Cinnamon Vegan Buckwheat Pancakes are identical to Vegan Buckwheat Pancakes, except that I add a Tablespoon of ground cinnamon and use apple juice instead of rice milk for the liquid.
That’s all it takes to completely change the flavor from yummy buckwheat pancakes to oh-so-yummy Apple Cinnamon Vegan Buckwheat Pancakes!
